Time once again to link up our menu plan for the week with Laura @ Organising Junkie. I'm just loving Menu Plan Monday!
Not only is this menu planning really helping me to be thrifty but it's also helping us to eat more healthily and saves us from lots of "what's for tea?" time-wasting!
This is a very easy week for cooking as we're away for a wee hotel break with my parents - how lovely and yummy - lots of local, organic produce and ingredients in the two restaurants that we'll be eating in, and one dinner is already pre-paid!
Last week's menu went down the plug-hole since life got so busy - thank goodness for all the freezer meals that came in mighty handy! As a result I'll be making that promised chicken curry and rice tonight for my hubs to enjoy tomorrow and in the near future (freezing the bulk).
Monday
Us - cooked breakfast/brunch/lunch for st. val's - yummy!
DH - leftover amalgamation
Me - leftover amalgamation
(Making chicken curry)
Tuesday (have to buy cake for my Mum)
(Making carrot and celery soup to use up veg in fridge)
(Bake frozen cookie dough for packed lunches)
DH - chicken curry and rice
Me - above soup (freeze the rest)
Us - birthday tea for my mum at my sister's
Wednesday (off for a mid-week break)
Us - packed lunch (sarnies with pink salmon and cucumber etc.)
Us - birthday dinner for mum at our hotel
Thursday
Us - packed lunch (snack boxes, dried fruit and nuts, fruit, carrot sticks etc.)
Us - dinner at golf club near the hotel
Friday
Us - packed lunch (crisp sandwiches, fruit etc.)
Us - something quick and easy from the freezer (pizza, chips and garlic bread most probably)
Saturday (friends visiting for a board games tournament with simple nibbles)
Us - soup and bread
Us - chinese takeaway
Sunday
Us - lunch at my parent's house
Us - something light if anything
Since it so isn't happening this week, bulk-baking some boiled cakes for the freezer will hopefully happen next week.
